
Chocolate Popcorn
Ok, so it sounds weird I know but it is awesome!
This was one of our Family Fun Night creations.
Noelle and I were thinking about what we could make for our Family Fun Night so we thought Carmel Corn would be
great be we had none so we improvised with great success.
What you will need
Pop your pop corn and then spread it on your cookie sheet trying to keep it only one popped kernel thick. Remove all of the uncooked kernels. (they hurt really bad if you don't see them and bite into them) Combine your chocolate chips and oil and melt them together slowly stirring constantly. After melting the chocolate drizzle it on top of your popcorn in a criss-cross pattern. Place whole thing into freezer for 8 minutes or until chocolate is hardened. Pull out and stuff yourself!
Corn Dogs
For a long time David was looking for a great homemade corn dog recipe. Don't ask me why but this
became a mild obsession to him. After several failed attempts Noelle stumbled upon this one. You can find
the original one here
Ingredients:
Directions:
Combine flour, corn meal, sugar and baking powder in a medium bowl. Combine mild and egg in a small bowl. Add to flour mixture; mix just until blended (batter will be very thick). Spread batter into shallow plate or dish. Insert skewers into hot dogs. (Ok so this is where we broke the rules. I don't like the wooden sticks in my dogs so I just use a fork to dip and dunk the dogs. This worked great for us.)
Add oil to 2-inch depth in electric skillet or large skillet; heat to 350° F (about medium heat on my stove)
Dip hot dogs into batter, coating all sides. Add 3 to 4 hot dogs to hot oil, turning after 5 to 10 seconds to set batter.
Fry the dogs, turning occasionally, until golden brown; pull them out and set them on a plate with a paper towel covering the plate to drain. Repeat this until you finish. (well duh!)
